Cold Chicken-Cheese Kabobs Ingredients:
- 1/2 pound boneless skinless chicken breast, cubed
- 5 ounces part-skim mozzarella cheese, cubed
- 1/2 cup balsamic vinegar
- 2 tsp olive oil
- 1/2 tsp red chili powder
- 1/2 tsp salt
- 1/8 tsp black pepper
- 18 cherry or grape tomatoes
How to make Cold Chicken-Cheese kabobs:
- Place chicken cubes in a large bowl.
- Season with salt, chili powder and pepper.
- Add balsamic vinegar.
- Mix well.
- Cover and refrigerate for 4 hours.
- After 4 hours, heat oil in a large skillet over medium high heat.
- Cook chicken for 10 minutes or until no longer pink.
- Cool slightly.
- Alternately thread chicken,tomatoes and cheese onto wooden skewers.
Cold Chicken-Cheese Kabobs are ready now.
