Jordon absolutely hated scalloped potatoes for most of his life until he was forced to eat some made by the cooks of the Salvation Army Community Services (where he works) and has come to enjoy them.
Ingredients
- 8 ounces of softened cream cheese
- 1/2 cup of sour cream
- 1 cup chicken broth
- 3 lb. red potatoes (about 9), thinly sliced
- 6 ounces of smoked ham, chopped
- 8 ounces shredded cheddar cheese, divided
- 1 cup of frozen peas
- 1/2 teaspoon of garlic powder to taste.
Directions
- Heat oven to 350 degrees Fahrenheit
- Mix cream cheese, sour cream, garlic powder, and broth in large bowl until well blended. Add potatoes, ham, 1 3/4 cups Cheddar and peas; stir gently to evenly coat all ingredients.
- Spoon into 13x9-inch baking dish sprayed with cooking spray; top with remaining Cheddar.
- Bake 1 hour or until casserole is heated through and potatoes are tender.
