2 lbs. pork butt, cubed
1 bunch fresh spinach, cleaned
2 medium chayote, wedged
2 thumbs ginger, julienned
1 medium yellow onion, sliced
5 cloves garlic, crushed
2 tablespoons fish sauce
32 oz. beef broth
4 cups rice washing
1/2 teaspoon ground black pepper
2 tablespoons cooking oil

Procedures:
  • Heat the cooking oil in a deep cooking pot. When the oil is hot, saute the garlic, ginger, and onion. Cook until the onion is soft. Put-in the pork and then cook for 5 minutes or until it browns.
  • Add-in the ground black pepper. Stir. Pour-in the beef broth. Let boil.
  • Pour 1 cup of rice washing. Allow the liquid to reboil. Cover and simmer for 45 to 60 minutes or until the pork becomes tender. Add the chayote wedges. Cook for 5 minutes.
  • Pour the fish sauce and stir.
  • Add the spinach. Cover the cooking pot and then turn the heat-off. Let the residual heat cook the spinach. Transfer to a serving bowl. Serve with white rice.

1 tablespoon cornstarch diluted in 1/4 cup water
1 teaspoon salt
1/2 teaspoon ground black pepper

Procedures:
  • Combine pork chops, mushrooms, water, beef cube, salt, and pepper in a slow cooker.
  • Slow cook on high setting for 3 to 4 hours.
  • Remove the pork chops and arrange in individual plates. Leave the sauce in the slow cooker.
  • Meanwhile, pour-in the water with cornstarch on the remaining sauce. Stir. Note: add water if needed.
  • Pour-in the mushroom gravy (sauce) over the pork chops.

Procedures:
  • Season the pork chops with salt and pepper. Coat the pork chops with barbecue sauce. Let it stay for 3 hours. Meanwhile, melt the butter in a skillet.
  • Add the vegetable mixture. Cook for 5 minutes. Sprinkle a little salt and pepper to taste. Set aside.
  • Grill the pork chops over medium heat for about 10-12 minutes per side (depending on thickness). Suffice remaining BBQ sauce.
  • Transfer to a serving dish. Serve with mixed vegetables and mashed potatoes.

  • Pour into water. Bring to a boil and simmer for 30 minutes.
  • Add the soy sauce and fish sauce. Stir. Add the diluted cornstarch. Stir.

Procedures:

For Souce:
¼ cup soy sauce
2 tablespoons mirin
1-2 tablespoons honey
2 teaspoons sriracha
2 teaspoons sesame oil
sliced scallions (for garnish)

Procedures:
  • Place the skin side of the pork belly in a pot large enough to hold it flat without curl. Add enough water to cover by a few inches. Add first amount of salt, pepper, garlic and bay leaf.
  • Bring to a simmer and cook naked in 2-2/2 hours or so until tender. Meat should not resist when pierced with a fork. Turn off the heat and let the meat and liquid to cool completely. Carefully remove the pork belly and place in a large bowl. Discard the liquid. Refrigerate, covered, overnight.
  • Heat oven to 450 ° F. If you have a convection option, use it. Place the pork in a baking dish and season on both sides of pork with salt and pepper. With a sharp knife, score the skin in a continuous slitting. Bake for 30-45 minutes until the skin has cracked. Let stand for 10 minutes. Procedures:
  • Heat oil in a pot. Saute garlic and onion. Add the duck and cook for 3-5 minutes or until all sides are light to medium brown.
  • Pour-in the fish sauce, tomato sauce, and water. Add the meat cube (or dust). Bring to a boil.

2 cups water or beef broth salt
1/4 cup shrimp paste (bagoong)

Procedures:

Ingredients
2 1/2 lbs ground pork
1 cup shrimp, minced
2 cups water chestnuts, minced
5 tbsp sesame oil
1 tbsp ground black pepper
1 cup onion, minced
1 cup carrots, minced
1 1/2 cups white mushroom, minced
1 pack won ton wrapper
1/4 cup scallions, minced
2 tsp salt
1 piece raw egg
Water for steaming

Procedures:
  • Combine all ingredients except water and wanton wrapper and mix well.
  • Wrap the mixed ingredients with won ton wrapper. (see the video for easy procedure)
  • Using a steamer, steam wrapped siomai (shaomai) for 15 to 25 minutes. The time depends on the size of each individual piece (larger size means more cooking time).
  • Serve hot with Kikkoman soy sauce and calamansi or lemon sauce.

Ingredients:
1.5 kilos Pork belly cut in the middle to make 2 squares
5 cups Water
1 Medium sized onion chopped
1 Tbsp Rock salt
1 tsp Whole black peppercorns
1 pc Laurel leaf

Sauce:
1 Green mango peeled and cut into small cubes
1 Onion chopped
3 pcs Firm , red tomatoes
2 pcs calamansi , juiced
¼ cup Bottled bagoong isda
50 g Wansuy or coriander leaves , pick out the leaves from the stems and rough-chop
  • Procedures:
  • In a large pot, combine the water, onion, salt, black pepper and bay leaf. Bring to a boil over high heat.
  • While boiling, put in the squares of pork belly. When the file again boil, cover the pot tightly and reduce heat. Boil gently for 3 hours. Drain the boiled pork belly in a colander. (Stock pig may be used to flavor other foods such as stew Monggo).
  • Allow the pork pieces to cool. Dry skin and then refrigerate for at least 3 hours.
  • Preheat turbo grill for 10 minutes. Place the pieces of pork, skin side up, on the rack and roast for 1 hour. Lechon the rest for 5 minutes before cutting. Serve with salsa Tagalog.
  • To make the sauce, combine all ingredients in a bowl and mix well. Cover bowl with plastic wrap. Refrigerate until ready to serve.

Pork Roast with Mushroom Gravy

Ingredients
1 (5 to 7 pound) pork loin or butt
1 whole head garlic, cloves separated and peeled
Emeril's Red Hot Sauce or other hot sauce
1 tablespoon Essence, recipe follows
1 teaspoon garlic powder
3 tablespoons vegetable oil
1 large yellow onion, chopped
2 ribs celery, chopped
1/2 medium green bell pepper, seeded and chopped
2 tablespoons teriyaki sauce
1 teaspoon Worcestershire sauce

For the Gravy:
6 tablespoons butter
4 tablespoons flour
1 medium yellow onion, finely chopped
1/2 medium green bell pepper, seeded and finely chopped
1 rib celery, finely chopped
2 cloves garlic, minced
1/2 bunch green onions, green and white parts chopped separately
2 cups rich beef stock
1/2 cup heavy cream
1 pound button or cremini mushrooms
2 tablespoons teriyaki sauce
   Salt
   Freshly ground black pepper

Directions
  • Preheat the oven to 450 degrees F.
  • Pierce the roast all over with the tip of a paring knife and stuff one clove of garlic into each hole, followed by a few drops of hot sauce. Sprinkle on all sides with Essence and garlic powder and rub into the meat. Heat the oil in a Dutch oven over medium-high heat and brown the roast evenly on all sides, about 10 to 15 minutes. Add the chopped onion, celery, bell pepper, and enough water to come 1-inch up the sides of the pan. Add the teriyaki sauce, Worcestershire sauce, and stir to combine and loosen any browned bits on the bottom of the pan. Cover and bake for 45 minutes.
  • Reduce the oven temperature to 350 degrees F and add a more water as necessary to come 1-inch up the sides of the pan. Continue to cook until very tender, about 3 1/2 hours total cooking time.
  • Meanwhile, to make the gravy, melt 4 tablespoons of the butter in a medium saucepan. Whisk in the flour and cook, stirring constantly, over medium heat, until milk chocolate-colored roux is formed, about 15 minutes. Add the onion, bell pepper, celery, garlic, and the white part of the green onions, and cook until the vegetables are soft but not browned, about 5 minutes. Whisk in the beef stock and heavy cream and cook until thickened, 10 to 15 minutes.
  • While the sauce is simmering, melt the remaining 2 tablespoons of butter in a medium skillet over medium-high heat. Add the mushrooms and cook, stirring, until tender and golden brown around the edges, about 5 minutes. Add the mushrooms and teriyaki sauce to the gravy and simmer until flavors come together, about 3 minutes. Remove from the heat and cover to keep warm.
  • Remove the roast from the oven and transfer to a platter. Cover loosely with foil to keep warm. Strain the pan juices through a fine mesh strainer into the gravy and simmer until heated through and thickened, about 5 minutes. Season with salt and pepper, to taste, and serve over the carved roast.


Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container.

Yield: about 2/3 cup
