Chicken Basil Coconut Curry Sauce | Healthy Basil Chicken Coconut Curry Recipes


Basil Chicken in Coconut Curry Sauce Recipe 


Ingredients: 
1/2 teaspoon salt
1/2 teaspoon ground coriander
1/2 teaspoon cumin
1/2 teaspoon ground cloves
1/2 teaspoon cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon freshly ground black pepper
1/4 teaspoon chili powder
1/4 teaspoon turmeric
1 lb skinless, boneless chicken thighs (you can use breasts, but the thighs are more flavorful)
1 large red onion, chopped (about 1 cup)
5 cloves garlic, minced
2 jalapeño peppers, seeded and minced
2 Tbsp olive oil or grapeseed oil
1 14-oz can coconut milk
2 teaspoons cornstarch
1 teaspoon Worcestershire sauce
3 Tbsp fresh basil leaves, chopped
1 Tbsp finely chopped fresh ginger

Procedures: 
  • In a small bowl, mix the salt, coriander, cumin, cloves, cinnamon, ground cardamom powder, black pepper, chili and turmeric. Set aside.
  • Rinse the chicken dry. Cut into 1-inch pieces. Put in a bowl and sprinkle the spice mixture on all parts. Coat well and let stand for 30 minutes at room temperature or in the refrigerator for 1-2 hours.
  • In a skillet 3 tablespoons oil 1 large heat over medium-high. Add the onion and jalapenos and cook for 3 minutes. Add garlic and cook 1 minute more. Remove the onions, peppers and garlic from the pan and place in a medium bowl. Set aside. Using the same pan for the next step.
  • Add 1 tablespoon oil to skillet and heat over medium-high heat. Add half of the chicken pieces, spread out on the plate so that is not filled. Brown for a few minutes on each side. When the chicken pieces are cooked through and no pink remains, remove from pan, add to bowl with onions. Cook the second batch of chicken parts in the same way. Remove from pan, add to bowl with onions.
  • Add the coconut milk, a couple tablespoons less, to the pan. In a small bowl, mix cornstarch with remaining coconut dissolve cornstarch. Add corn mixture startch back to the pan with the coconut milk. Cook and stir over medium heat until thickened and bubbly. Mix the Worcestershire sauce. Add chicken mixture, basil and ginger. Cook for 2 minutes to cook through.

Inexpensive Christmas Gifts & Stocking Stuffers: Under $25

Butter BoatButter boat ($16) This uses evaporative cooling to keep butter at room temperature without spoiling.  There's a well for water, and then a butter dish that rests on top of it, and slowly wicks water through the ceramic.  The upshot is that as long as you change the water every few days, you can keep butter in the dish for weeks which is awesome considering Saskatchewan’s hot summers.

Cookbook stand ($19) | This holds the cookbook up where you can see it and keeps it from having something splashed all over it which if I let Jordon, Mark, or Oliver in the kitchen is very likely to happen.

Ninjabread Cookie CuttersNinjabread Cookie Cutters ($10) | Gingerbread was so last year.  Ninjabread cookie cutters make any cookie a lot more fun (and stealthily dangerous) to make and eat. 

Silicon Pastry Mat ($11) |  Silicone's is both flexible and things won't stick to it.  It's ideal for rolling pastry and cookies.  It not only makes things easier on you but it means you can use less flour, resulting in a more delicate and tender product.

Silicone Oven Mitts ($20) They may not have the character of some oven mitts but they are waterproof which means that if you have to, you can reach into a boiling pot and grab whatever it is that you dropped in there. Heat resistant to 485-Degree F

Oxo Kitchen Scale ($29) | A scale is really necessary if you're going to do serious cooking because wherever possible, you should measure your ingredients by weight, not by volume.  A given mass of flour can vary a lot in volume, depending on things like humidity, temperature, and how long it's been sitting.  A weight indicator shows the capacity left on the Scale before maximum capacity is reached. Press the zero button to offset the weight of a container or to set the weight back to zero to add additional ingredients. The display features large, easy-to-read numbers which measure in 1/8-ounce and 1-gram increments and the platform can be removed for cleaning. The Scale has a 5-pound capacity and two AAA batteries are included.

Immersion blender ($42)  Don't buy a cheap one--stick with Braun, Cuisinart, or KitchenAid.  They aren’t cutting edge but if you don’t have one, you don’t know what you are missing.  I use mine for my making Caesar Salad Dressing, pureeing soups, and chopped a lot of vegetables.

Black and Decker Thermal Carafe Coffee MakerBlack and Decker Thermal Carafe Coffee Maker ($48) | With a stylish design and durable stainless steel carafe, this 8-cup coffeemaker is perfect for home, office or practically anywhere you want hot, fresh coffee at the touch of a button. All this, plus an easy-clean control panel and dishwasher-safe removable parts for effortless cleanup.  The advantage of the carafe is that you won’t be stuck with hot burnt coffee in case you don’t get it off the maker in time.  The coffee will be as hot and fresh later as it is right now.

Silicone rolling pin ($57) | Once you try one and realize that you can roll things out without it sticking to your rolling pin, you will never go back to your wooden rolling pin. The handles on this pin are made out of soft grip rubber and contoured to fit your hand, providing comfort and stability. While the stainless steel ball bearings and counter balanced pin ensure consistent, easy rolling. It’s the same premise as the silicon pastry mat, less flour means a more delicate and tender end result (and less mess).

Froth au Lait ($70) While I am not a big coffee or espresso kind of person (and Jordon likes his coffee blac k) this is an ideal accompaniment to a coffeemaker or espresso machine. You can also create topping for desserts, hot chocolate, and more. Once the milk is added, the frother mechanically agitates and aerates it to create rich froth. It works for up to 1-1/2 cups of milk (1-1/2 cups generates about 6 cups of froth), and takes about three minutes to complete the frothing cycle. The sturdy plastic pitcher comes off the base to pour the froth. It's also possible to add syrups to the milk as you're frothing it. A recipe book is included to get you started as it also allows you make a wide variety of sauces.

imageBodum Tea Press ($57) |A lovely way to brew tea to your exact preference, the Bodum Shin Cha tea press combines elegant shaping with crafty functionality. The spherical glass pot features a stainless-steel plunge infuser inside and a stainless-steel lid. Fill the infuser with loose leaf or tea bags, add hot water, wait the desired amount of steeping time, then plunge. The plunger pushes the tea below the infuser holes, so brewing stops on a dime and tea does not over steep to the point of bitterness. To clean up, the unit goes safely in the dishwasher. With its glass spout, body, and handle, the Shin Cha showcases tea colors beautifully but does require somewhat careful handling.

All-Clad One Quart Saucier ($75) | Little pans (especially high quality ones) tend to be overlooked as gifts but I use them a lot around the house in making things like gravy, au juice, or if I need a smaller portion of something.  I never thought it was that important but now that I have one, I love it.

Electric Kettle  ($70) | Jordon has no respect for my electric kettle at the cabin but it stops me from having to turn on the stove while cooking up a cup of noodles, making a cup of tea or even getting hot water for cooking.

Burr Coffee GrinderBurr coffee grinder ($87)  For grinding larger quantities of coffee beans for a coffee-drinking crowd, Capresso's commercial-grade Infinity grinder handles 8-1/2 ounces of beans at a time. Sixteen different settings--four each in the four categories of extra fine, fine, regular, and coarse--let you adjust the grind to the specific blend of coffee and method of brewing. The finest setting is ideal for preparing Turkish coffee, which is a rare feature to find in a grinder. A built-in timer sets the grind for anywhere between 5 and 60 seconds so you can walk away without having to constantly press a button to continue the grinding process. The Infinity has an advanced conical burr design made of steel that is usually only found on commercial grinders. This burr design slows down the gears and reduces the amount of friction and heat to preserve coffee's flavour and aroma. The coffee container holds up to 4 ounces of grounds and remains sealed during grinding. For safety, the bean container also needs to be locked into place for the Infinity to operate. For easy cleaning, the bean container and upper burr lift off so you can clean the grinding chamber with the included brush and wipe down the exterior housing.

Electric Pepper Mill ($68) | What’s the advantage of an electric pepper mill?  It is quite cool to be able to grind pepper into your sauce one-handed, while stirring with the other hand.  Also, it’s once of those great gifts that is for those who are struggling with arthritis or are finding it harder and harder to do things with their hands.  As Jordon struggles with a torn rotator cuff this fall, it’s amazing how big of a difference things like this make.

Cuisinart Griddler ($84) | Yes you have a George Forman grill but this is so much more than that.  The Cuisinart Griddler is actually five appliances in one. A hinged, floating cover and one set of removable and reversible cooking plates turn the Griddler into a contact grill, panini press, full grill, full griddle, or half grill/half griddle. Dual temperature controls and indicator lights make this product easy to use.

Cusinart Countertop OvenCuisinart Countertop Oven ($180) It’s a great replacement for the stove in the summer and a supplement to the oven when you are making a big meal or for parties.  We have a toaster oven at the cabin as our main oven and while I miss the size of my oven, I am surprised how much cooking and baking I can do with it.

Kitchenaid Commercial Grade Stand MixerKitchenaid Stand Mixer ($404) |  The Professional 600 TM has a powerful motor that is crafted for commercial-style performance, the direct drive, all-steel gear transmission delivers unyielding power for professional results. Salsa Recipe

Ingredients

  • 24 cups tomatoes -- peel, core, chop
  • 2 cups white vinegar -- 5%
  • 2 cups jalapeno chiles -- chop with seeds
  • 2 cups sweet peppers -- diced, *
  • 2 cups sweet onions -- diced, *
  • 2 small cans tomato sauce
  • 3 cloves garlic -- minced
  • 1 tbsp pickling salt -- do not use table
  • bunch cilantro -- chopp

Directions

  1. Red peppers make a prettier sauce, but green is ok. I like the flavour of the red ones. Get sweet onions like Vidalia or Texas 1020 if you can.
  2. Cook tomatoes and vinegarfor an hour in a large[!] pot. Add remaining ingredients except cilantro and cook another a to 2 hours 'til a consistency you like. Add cilantro. Put in hot pint jars and process in water bath 15 minutes.
  3. Makes about 10 pints

Creamy Taco Dip Recipe

Ingredients

  • 2 8 ounce packages of cream cheese -- softened
  • 1 cup of sour cream
  • 8 ounces of taco sauce or salsa
  • 2 teaspoons ground cumin
  • 15 ounces of refried beans
  • 1 cup of shredded lettuce
  • 1 cup of shredded Cheddar cheese
  • 1 medium tomato -- diced
  • 1/4 cup of ripe olives -- chopped
  • 1/4 cup of canned green chilies -- chopped
  • tortilla chips

Directions

  1. In a mixing bowl, beat cream cheese and sour cream until smooth. Stir in taco sauce and cumin; set aside. Spread the refried beans over the bottom of a serving platter or
  2. 13x9x2″ dish. Spread cream cheese mixture over the beans, leaving about 1″ uncovered around the edges. Top with layers of lettuce, cheese, tomato, olives and chilies. Serve with tortilla chips.

Yield: 16-20 servings.

Camper’s Pizza Recipe

Ingredients

  • 3/4 pound ground beef (80% lean)
  • 1 Medium onion; chopped
  • 8 oz Refrigerated crescent rolls
  • 8 oz Pizza sauce
  • 4 oz Mushroom stems and pieces; diced
  • 2 1/4 oz Sliced pitted ripe olives; diced
  • 1/3 c Green bell pepper; coarsely
  • 1 c Mozzarella cheese; shredded
  • 1 teaspoon dried oregano leaves

Directions

  1. Brown ground beef and onion in well-seasoned 11 to 12-inch cast iron skillet over medium coals. Remove to paper towels to drain. Potir off drippings from pan. Separate crescent (tough into triangles; place in skillet, points toward center, to form circle. Press edges together to form bottom crust about 1 inch up the side of pan. Spread half of pizza sauce.
  2. Spoon ground beef mixture over sauce. Cover with mushrooms, olives and green pepper. Pour remaining sauce over all; sprinkle with cheese and oregano. Place pan in center of grid over medium coals. Place cover on cooker: cook 20 to 30 minutes or until crust is lightly browned. (If cooked over open grill or coals, cover pan securely with foil.)

Reconsidering The Rook and Raven

Earlier this year I had lunch at The Rook and Raven and wasn't impressed.  Since then Jordon and I have been back numerous times in the evening for excellent appetizers like Cauliflower Fritters, Yorkie Bites, and the best chicken wings in Saskatoon (with an amazing blue cheese and mayo dip).  They also have an amazing dinner menu and last night I had a chance to check out their Macaroni and Cheese which is probably the best that you will ever try.
As for their lunches, they have improved a lot and whether it is the excellent burger, the daily 'za, or the much loved grilled cheese (with bacon and apple in it).  The Rook has become the best pub in Saskatoon for atmosphere and food.  Everyone can have a bad day but since then the Rook has put together dozens of excellent ones.

After hosting dinner parties for strangers in their own apartment, the NYC Department of Health took notice and shut them down, but Tamy and Felipe decided to open a restaurant in SOHO. Marinated Grilled Shrimp | Sea Food Healthy Marinated Grilled Shrimp Recipe

Marinated Grilled Shrimp

Marinated Grilled Shrimp
Ingredients:
3 cloves garlic, minced
1/3 cup olive oil
1/4 cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 pounds fresh shrimp, peeled and deveined skewers


Procedures:
In a large bowl, combine the garlic, olive oil, tomato sauce and red wine vinegar. Season with basil, salt and cayenne pepper. Add shrimp to the bowl, and stir until well coated. Cover and refrigerate for 30 minutes to 1 hour, stirring once or twice. Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard the marinade. Lightly oil the grill grill. Cook shrimp on preheated grill for 2-3 minutes per side or until opaque.

The "Olive Garden" Alfredo Sauce Recipe

Make Alfredo sauce just like the Olive Garden.

Ingredients

  • 1 pint of heavy cream
  • 1/4 pound of butter (one stick)
  • 2 tablespoons cream cheese
  • 3/4 cup Parmesan cheese - do not use cheese that has been pre-shredded or pre-grated
  • 1 teaspoon garlic powder

Directions

In a saucepan, combine butter, and heavy cream. Simmer until all is melted and mixed well. Add the Parmesan cheese and garlic powder. Simmer for 15 to 20 minutes on low. You may wish to add a little salt and pepper. I have made this with half and half, but we prefer the heavy cream.

Do not use plain milk

If the sauce is a little thin, add cream cheese in after you have finished the Parmesan cheese. Add cream cheese and whisk until the sauce thickens.

Broccoli Rabe with Caramelized Onions Recipe

Broccoli Rabe with Caramelized Onions
Ingredients: 
Olive oil
1 yellow onion, sliced into slivers, lengthwise (with the grain)
1 large bunch of broccoli rabe (raab, rapini), rinsed and cut into 2-inch long pieces
2-3 garlic cloves, sliced
1/4 teaspoon red chili flakes
Salt
Freshly ground black pepper

Procedures:
1. Heat 2 Tbsp olive oil in a large sauté pan on medium heat. Add the onions, spread out in a thin layer. Cook, stirring occasionally until softened and then lightly browned. (Tip: to speed up the caramelization process you can sprinkle a pinch of sugar over the onions.) If the onions start to dry out at all, lower the heat (you can add a little water to them too.) They should brown, but not get dried out.

Broccoli Rabe with Caramelized Onions2. After starting the onion, put a large pot of water to boil. Onions take at least 15 minutes to cook, so you'll have time to get the water boiling. Salt water (about a tablespoon of salt for 3 quarts of water). Prepare an ice bath, fill a large bowl halfway with ice water. Add the rabe to the boiling water. Boil for 1 minute. Use a slotted spoon to remove from water and place in ice bath to stop cooking. Shocking the rabe with ice water will also help keep the bright green rabe.
Note that some people bleach their rabe, some not. Rabe can be quite bitter, scalding and help take the edge off the bitterness. If your Arabic is not particularly bitter, or bitter vegetables like, is easy to skip this stage of bleaching.
Drain the rabe ice water. Use a clean cloth to gently squeeze the excess moisture from the Arabic.

3. Once the onions are lightly browned, remove from pan to a plate. Using the same pan, add another tablespoon of olive oil and heat the pan over high heat. Add the chili flakes. Once the chile flakes begins to sizzle, add the garlic. Once the garlic begins to brown at the edges only add broccoli rabe and onions. Stir well so that it gets rabe topped with olive oil. Cook over high heat until most of the moisture is gone, about 5 minutes if blanched first, a minute or more also if you skipped the blanching.
